Plant-Based Savory Lentil Oatmeal

Months ago, I joined forces with two of the most talented photogs and mindful people I know to visually prolong the enjoyment of this vibrant dish. I found this loaded savory oatmeal and lentil bowl recipe earlier this year in one of the most delightful cookbooks I own, The Oh She Glows Cookbook, and was thrilled when my two friends, Shelby and Khalid, were enthusiastic about making a collaborative project out of it! This recipe is perfect for those who don't have an appetite for the typical sweet breakfast treats in the morning. However, if sweets are your thing (we are one in the same), this power bowl could be eaten for lunch or dinner. No matter the time, you will surely feel satisfied and nourished afterward (though your bowl may feel a little empty).

Let's begin, shall we?

Firstly, prep your ingredients. Due to the minimalist nature of this recipe, all you really have to do is mince one garlic clove and chop one small shallot or onion of choice. You should also wash your lentils.

In a medium saucepan, combine oats, lentils, vegetable broth, garlic, and shallot. Bring to a boil.

Simmer, uncovered, for 8-12 minutes, or until thickened (and taste test shamelessly).

While you wait for everything to cook, prepare your toppings.

Once the lentil/oat base is finished cooking, spoon it into two bowls and add your toppings.

Placing the toppings on any dish is always the best part. We used cherry tomatoes, hummus, avocado, and a few of these lovely gluten-free crackers for varying flavors and optimum deliciousness (quick confession: raw tomatoes aren't my favorite but they looked so nice atop the lentils and oats, they had to be included). A few additional topping ideas: green onion, salsa, my friend even added kimchi to hers– whatever your taste buds desire.

Voilà! There you have a dish packed with flavor and nutrients, and a great start to your morning (or afternoon or evening).

Ingredients

  • 1/3 cup rolled oats (gluten-free, if preferred)

  • 1/4 cup red lentils

  • 1 1/2 cups vegetable broth

  • 1 small garlic clove, minced

  • 1 small shallot, chopped

  • salt and pepper to taste
